High Protein, Low Carb, Holiday Stuffing

A high protein, grain free stuffing the whole family can enjoy this holiday season. Whether you stuff a bird with it or just bake it on its own, this gluten free, low carb stuffing is sure to be a crowd pleaser at your table.

Ingredients ⁠⁠


1 Loaf of Unbun Complete Protein Bread (sliced into 1inch cubes)

2 tbsp olive oil or avocado oil

¼ cup butter

1 medium red or white onion ⁠⁠

3 stalks celery (chopped)⁠⁠

1 tbsp minced garlic ⁠⁠(2-3 cloves)

1 tbsp dried thyme ⁠⁠

5 sage leaves ⁠⁠

2 sprigs Rosemary ⁠⁠

1/2 cup cranberries ⁠⁠

2 eggs

2 cups vegetable broth 

Salt and pepper ⁠⁠

Instructions ⁠⁠⁠⁠

  1. Preheat the oven to 300F. 
  2. Place the cubed bread on a baking sheet and drizzle with oil. Toss to evenly combine. Bake, stirring every 10 minutes, for 30 minutes until dry and slightly toasted. Let cool.
  3. Increase oven temperature to 350 degrees (once bread cubes have been removed). ⁠⁠
  4. On low - medium heat, warm butter in pan. 
  5. While the pan is warming, cube the bread slices into 1 inch pieces and set aside.
  6. Add onions to the pan with a pinch of salt. Sauté onions until soft, about 15 min. (for extra flavour, sauté 20 min or longer). 
  7. Add celery and garlic, sauté for another 10 minutes. 
  8. Add in herbs, cranberries and salt and pepper. Stir until fragrant.⁠⁠
  9. Place the eggs in a bowl and whisk. Slowly add the warm broth to the eggs, starting with just a few tablespoons at a time, while constantly whisking. 
  10. In a large bowl, place the bread cubes, onion/cranberry/herb mixture, and egg/broth mixture together. 
  11. Gently stir until well combined.⁠⁠
  12. Transfer to a greased 9x13 baking dish.
  13. Cover baking dish with foil and bake covered for 30 minutes, and another 10 minutes uncovered.⁠⁠

Remove from the oven and enjoy warm!⁠⁠
